Our family has been making the effort to switch to an alkaline diet for optimal health. To those who may not know what an alkaline diet is, it’s one which focuses upon eating foods that promote a healthy pH balance in the body for preventing illnesses that can develop when the body’s pH is not in balance. Zucchini is an alkaline food and contains vitamins and minerals that are said to reduce cholesterol levels and high blood pressure, to promote strong teeth and bones, and to provide a rich amount of antioxidants.

20170124_150237-1Here is a quick, easy, tasty recipe for getting your daily serving of zucchini from my family to yours. 🙂


4 Zucchini

1 red Bell Pepper

1 Green Bell Pepper

1 White Onion

1 teaspoon basil leaves

1 teaspoon turmeric

Canola or Grape seed oil

Sea Salt and ground black pepper as desired for added flavor


  1. Wash and chop zucchini, bell peppers and onion into bite sized pieces.
  2. Pour canola or grape seed oil into a skillet or large frying pan (just enough to cover the bottom of the pan), heat oil at medium heat.
  3. Add your chopped vegetables to the pan with the basil leaves, turmeric, sea salt and ground black pepper. Cook over medium heat for 10-15 minutes.
  4. Serve alone or with brown rice.
